Travelers’ Choice Recipe – Voila Bistrot’s Filet Mignon with Dried Mushroom Sauce

Filet Mignon with Dried Mushroom Sauce

For the filet mignon
  1. 2, 8 ½ oz (250 g) filet mignon tournedos
  2. 3 ½ oz (100 g) dried funghi, soaked in hot water to rehydrate
  3. ½ cup (120 ml) cognac
  4. 1 cup (240 g) crème fraiche
  5. 1 cup (240 ml) homemade beef broth
  6. Salt and black pepper to taste
  7. Oil for pan-grilling
For the filet mignon
  1. Season the meat with salt and pepper on both sides.
  2. Heat a skillet and add a splash of oil.
  3. When the pan is very hot, add the tournedos.
  4. Grill 3 to 5 minutes on each side, depending on how well done you prefer the meat.
  5. Add the congnac to flambé.
  6. Remove the tournedos from the heat and set aside.
  7. In the same skillet, add the beef broth, the re-hydrated mushrooms, the crème fraiche, and the salt and pepper.
  8. Let it reduce until thickened.
  9. Put the tournedos back in the skillet with the sauce and let sit for about 2 minutes.
Plating
  1. Serve hot with rösti potatoes. This dish also pairs well with Saint Émilion wine.
