Travelers’ Choice Recipe – Girl & The Goat’s Smoked Apple Potato Purée

Smoked Apple Potato Purée

  1. 2 Pink Lady apples, peeled and sliced
  2. 2 ½ lb Yukon potatoes
  3. ¼ qt cream
  4. ¼ lb butter
  1. Roast potatoes at 300 degrees for 45-60 minutes.
  2. Allow to cool down a bit and remove skin.
  3. While potatoes are roasting, lightly sauté apples for a few minutes to soften.
  4. Smoke apples for 45 minutes at 300 degrees.
  5. Heat up the cream and butter in saucepot until butter is melted.
  6. In a food mill run potatoes and apples in batches, not to over crowd, into either a large mixing bowl.
  7. If you don’t have a food mill, you can use a box grater.
  8. Once done milling apples and potatoes, add the cream and butter mixture until all mixed together.
  9. Season with salt.
